OPENING AND POURING WINE

Here are instructions on how to open a standard wine bottle. In the video, the bartender is using a waiter corkscrew. There are a variety of different corkscrews, but this is the most standard one that we use for the agency and that bartenders generally use to open wine bottles. The instructions to open a wine bottle are as follows:

    1. Use the small knife on the corkscrew to cut through the lower lip of the foil on the wine bottle, and remove the foil at the top

    2. Center the metal tip of the screw of the corkscrew into the cork

    3. Give the screw 6 half turns or until there is only one more curl above the cork

    4. Put the silver lever down with one hand and hold the nook at the bottle opening and hold it down firmly

    5. Pull up with the lever on the other side

    6. Re-adjust and repeat until the cork is out of the bottle

A standard 750 ml bottle of wine holds 25 oz and one wine glass is usually 5 oz so a a standard wine bottle pours 5 glasses of wine. Here is a video on how to pour wine. Before you pour the wine, it is important to show the customers or clients the front label of the wine. After pouring the wine, you turn the cap in order to stop the flow, and then bring it up.

Mojito

  • muddle mint with 0.5 oz simple syrup

  • 2 oz light rum

  • 0.75 lime juice

  • top with seltzer

  • mint garnish

Margarita

  • 2 oz tequila

  • 1 oz triple sec

  • 1 oz lime juice

  • 0.5 oz simple syrup

  • lime garnish

  • salt rim (if requested)

Long Island Iced Tea

  • 0.5 oz vodka

  • 0.5 oz gin

  • 0.5 oz rum

  • 0.5 oz tequila

  • 0.5 oz triple sec

  • 0.75 simple syrup

  • 0.75 lemon juice

  • splash of coke for color

  • lemon garnish

Moscow Mule

  • 1.5 oz vodka

  • 4 oz ginger beer

  • 0.25 oz lime juice

  • lime garnish

Dark and Stormy

  • 1.5 oz dark rum

  • 4 oz ginger beer

  • 0.25 oz lime juice

  • lime garnish

White Russian

  • 2 oz vodka

  • 1 oz kahlua

  • 1 oz milk

  • no garnish

[Insert Call brand] Soda

  • put ⅔ ice into a highball glass

  • 1.5 oz call brand

  • fill with club soda

Old Fashioned

  • muddle ice cubes and 2-3 dashes of angostura bitters

  • fill glass halfway with ice

  • 3 oz of desired whiskey (bourbon or rye)

  • garnish with orange twist

Negroni

  • 1.25 oz gin

  • 1.25 oz campari

  • 1.25 oz sweet vermouth

  • orange twist

Martinis

  • 3 Questions: Vodka/Gin? How dry? Shaken or stirred?

  • Dryness:

    • Regular: 4 oz vodka/gin, 0.5 dry vermouth

    • Dry: 4 oz vodka/gin, 0.25 dry vermouth

    • Perfect: 4 oz vodka/gin, 0.25 dry vermouth, 0.25 sweet vermouth

    • Dirty: 4 oz vodka/gin, splash of olive oil

    • Naked: 4 oz vodka/gin, no vermouth

Cosmopolitan

  • 3 oz citron vodka

  • 1 oz triple sec

  • splash of lime juice

  • splash of cranberry juice

  • lime garnish

Substitutions: citron vodka = vodka + splash of roses’ lime → roses lime = lime + simple syrup → simple syrup = water + sugar

Manhattan (served as a martini, usually stirred, dryness varies)

  • 3 oz rye whiskey

  • 0.25 sweet vermouth

  • splash angostura bitters

  • cherry garnish

Mimosa

  • 4 oz champagne

  • 2 oz orange juice

Aperol Spritz

  • 1.5 oz aperol

  • 3 oz prosecco

  • 0.75 oz club soda

  • garnish with orange slice
